Roast in the Crockpot

This is my comfort food! My mom used to make a roast in the crockpot like this and it still makes my heart smile when I make it. Plus… I’m a sucker for putting a meal in the crockpot in the morning and then pretending someone cooked for me when I come home at night from work with the house smelling amazing. 🙂

Ingredients:

  • 1 onion sliced
  • 2-3 lb roast (we alternate between beef & pork at our house)
  • 2-3 cloves of garlic
  • salt & pepper to taste
  • 5-6 red potatoes, quartered
  • 5-6 carrots peeled & cut in thirds (or I use baby carrots)
  • 2 bay leaves
  • 1 c. water

Directions:

I literally just put all of this in a crockpot in order, put it on low and cook it all day… probably 8-10 hours. Always a winner at our house and the leftovers can be made into BBQ sandwiches, soups, etc.

BONUS:  If you forget to thaw the roast (which I do ALL THE TIME), you can put it in the crockpot with the onion, water & seasonings on high for 4-5 hours, then add the carrots & potatoes and cook on high for another 4-5 hours.
