Shrimp & Veggie Pesto Pasta

This was another incredible recipe I got from a program nutrition guide! I love it when I find winners and this one definitely was… Dimitri raved about it for days!

This is from the Beachbody CLEAN WEEK nutrition guide, the only thing I did differently was that the original recipe had the broccoli & Parmesan on the side… I threw it all together! This makes 1 serving, but can be doubled or quadrupled easily. 

Ingredients:

  • 1/2 cup cooked pasta (I used brown rice pasta, but you could also use quinoa pasta)
  • 1 Tbsp butter or olive oil
  • 4 oz shrimp
  • 1/2 red pepper sliced
  • 2 Tbsp prepared pesto
  • 1 cup steamed broccoli
  • 1 Tbsp Parmesan cheese

Directions:

Heat the butter in a pan over medium heat. Add in the sliced red pepper & shrimp and saute until the shrimp is pink. 

Cook the pasta and while it is still hot, add all the ingredients and stir. 

Simple and AMAZING!
