On our 80 Day Obsession journey, I am committed to following the meal plan, but I also want to keep our food delicious and interesting. This is not a totally new concept for a recipe, but the ratios are probably a little different than what are commonly used to. It was AMAZING and we didn’t feel like it was missing anything. We were plenty full for the rest of the evening, too!
- 1/2 cup cooked whole wheat pasta
- 1 tsp prepared pesto
- 3/4 cup chicken breast, cut into 1/2-1 inch cubes
- 2 tsp chopped garlic
- 1 tsp dried basil
- Salt, Pepper & seasoning to your taste (I like Flavor God’s Garlic Lovers for this)
- 1 cup steamed broccoli
- 1/4 cup shredded Parmesan cheese
Season chicken with garlic, basil, seasoning, salt & pepper. Cook pasta according to the directions on the package. While the pasta is cooking, cook the seasoned chicken in a non-stick over medium high heat until cooked through, stirring regularly. Steam the broccoli. Once the pasta is cooked, and while still warm, toss the pasta in the pesto. Add the cooked chicken & steamed broccoli & toss. Top with Parmesan cheese.
