Buffalo Chicken Sweet Potato with Broccoli

This is inspired straight from my Whole30 days. I thought this combination would be gross honestly. But I will try anything once an hope for the best! This was the best! Simple, lots of flavor, and perfect for cold days.  This would also be really good served with celery instead of broccoli!


  • 3/4 cup shredded chicken
  • 2 Tbsp hot sauce with the fewest ingredients
  • 1 Tbsp coconut aminos
  • 1 small sweet potato
  • 1 cup steamed broccoli

Optional “Ranch” for the top. (If you choose this option, decrease the amount of chicken to 1/2 cup in order to stay within your container count).

  • Whisk together 1/4 cup plain green yogurt, 1 tsp dill, 1/2 tsp garlic, 1 tsp dried parsley, 1 tsp chives, a little salt & pepper. You can thin it out with a little unsweetened almond milk if you like. 


Mix together the hot sauce and coconut aminos, then toss with the shredded chicken. Bake your sweet potato either in the oven or microwave. Slice open and top with the buffalo chicken and optional ranch if you like. Serve with broccoli.
