Stuffed Pepper Soup

We love soup in the winter! And I’m all about experimenting with my Instant Pot, so when I threw this together and it was so good, I decided it was a keeper! You could definitely do this on the stove just the same and let it simmer.


  • Olive oil spray
  • 16-20 oz spicy Italian turkey sausage (either ground or in links)
  • 1 onion, diced
  • 3 bell peppers, diced
  • 3 cloves of garlic, minced
  • 16 oz (approx 2 cups) of cauliflower rice
  • 1 14oz can fire roasted diced tomatoes
  • 1 14oz can tomato sauce
  • 4 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano


Turn on Instant Pot and press the Saute button.  Once the IP is hot, spray the inside with olive oil and add onion, bell peppers, and sausage (if in links, remove it from the casing first).  Cook until the sausage is cooked through. Add in the rest of the ingredients and stir.  Place lid on the IP & lock (make sure the seal is no set to vent).  Press Cancel, then Manual (or Pressure Cook) and set it for 7 minutes.  After it is done cooking, do a quick release and serve!
